Ingredients

60g Nestle GOFREE Corn Flakes, roughly crushed
50g finely grated parmesan cheese
450g pork tenderloin
2 tbsp olive oil
lemon wedges
1 Egg

Prep your pork tenderloin by slicing it into 1cm thick medallions

Take two large bowls. In the first, whisk your egg. In the second, place your GO FREE Corn Flakes and combine with the grated parmesan

Dip your medallions in the egg, first, and then coat thoroughly in the corn flake and parmesan mixture

Heat a large frying pan over a medium heat, along with the olive oil

Working in batches, taking care not to overcrowd the pan, fry the medallions until beautifully golden brown. Set aside on kitchen paper while you cook the rest
