Shreddies® Oat & Carrot Muffins Recipe
Quick and easy Shreddies® Oat & Carrot Muffins Recipe. These tasty muffins are great to share with the family on a picnic or as party of a balanced lunchbox at school. Why not try with some low fat Greek yoghurt and seasonal fruit for a fruity twist?
Ingredients
120 g Shreddies Original
90 g rolled oats
100 g whole-wheat flour
100 g brown sugar
1/4 tsp salt
1/2 tsp baking soda (bicarbonate of soda)
1/2 tsp baking powder
1 tsp cinnamon
90 g mashed banana
50 g melted buttery baking spread (or any vegan butter alternative or margarine)
120 ml plant-based milk alternative (almond, coconut etc)
1 tsp apple cider vinegar
140 g shredded carrot
optional: 50 g coarsely chopped walnuts
optional: 50 g dried cranberries
2 tablespoons crushed Shreddies Original
2 tablespoons brown sugar
2 tablespoons rolled oats
