Gluten-free muffins
These muffins are not just gluten-free and tasty, or a great alternative to our apple sauce muffins, but they can also be frozen, making them a great grab-and-go breakfast option on your way out of the door.
Preheat your oven and grease a 12-cup muffin tin. In a mixing bowl add your buttermilk, melted butter, lemon juice, and eggs, then combine. Set the mixture aside.
In another bowl, place flour, crushed Go Free Corn Flakes, baking powder, baking soda, salt, and granulated sugar, and then mix. Transfer a little of this mixture to another bowl, and add your choice of berries, toss to coat.
Add your wet ingredients to your dry until combined, the batter will be thick and soft. Gently fold the coated berries and the rest of the ingredients together. Once complete, add to your lined cupcake tray and bake for 10 minutes.
Gluten-free berry porridge
This one may seem like a rogue choice for a quick and easy breakfast idea for work. However, when this GO FREE® berry muesli is made in advance and portioned into containers, it makes for a great grab-and-go breakfast, especially when served with fresh seasonal fruits and low-fat yoghurt.
It is simple to throw together and only contains 7 ingredients. Preheat your oven and in a large bowl combine chopped walnuts, GO FREE® Honey Nut Flakes or Plain Corn Flakes cereal and oats. Once your dry ingredients are combined, add in the melted baking spread and honey. Make sure everything is coated in the wet ingredients.
Once combined, spread the mix on a lined baking tray and bake in your hot oven for 15-18 minutes. Once the mix is golden brown, remove from the oven and allow to cool. Break up your muesli and keep it in an airtight container. It will stay fresh for up to a week!
